Hello! I spotted your site on boingboing some time ago, and finally gave making these a shot recently. First time I'd ever made pancakes, actually.. Can I ask how on earth you're doing this? :) I tried to make some red ones, and added some red and blue food coloring, and while one side would usually come out okay, the side that went down on the pan first would usually come out brown, sometimes with only the faintest hint of red..
Hi J. Lower the temperature of your griddle when you're making colored pancakes and you'll get a LOT less browning. They'll take a little longer to cook but they'll look great.
